John's occupation was recorded as being a Brewer of Saint James, Taunton. His Taunton Ale seems to have become the choice drink of a certain sort of well placed gent. Benjamin Disraeli, 1st Earl of Beaconsfield and twice Prime Minister of Great Britain mentions the brewery in letters from the mid-1830s, he tells a correspondent that 'Eales White' would send a barrel of Taunton ale which he describes as "something marvellous." The report of Crimean Army Fund Committee of 1855 also mentions Eales White, Esq. of the Taunton Ale Brewery as a contributor to the cause among those who gave presents of wine, spirits or beer.
He was a prominent Freemason and his large grave memorial "was erected by his masonic brethren".
He died aged 59 on the 5th of May 1855. His funeral and burial took place on the 8th of May 1855.
